Machining hardened M2 tool steel

All, Got a few new jobs where I need to rough turn and then harden some M2 steel to 58-60 Rc. I will then need to hard turn it to close tolerance. I know they have made good advancement in carbide inserts in this area but I am new to it. Is this doable or is it a grinding operation. I will need a 16 finish at worst and +/-.001 dia on parts ranging from 1-5" dia.
