Help Understanding work offsets for my Hitachi Seiki HT23J Yasnac j300L contol

This is my first CNC Lathe. I understand the principles, but I don't want to crash. I have a toolsetter and do my offsets for each tool.
But how do I determine the work offset?

Do I have to program a tool and offset ? (not just index manually) then touch off?

Also there are two Z offsets in the work offset window(work and Z). And for the x offset isn't that always going to be centerline?

For some reason there is an X number other than zero on my offset?

Also when I run a program, which I've done with a work offset way beyond the possibility of crashing I have two questions.

1 Why do I keep getting an alarm that I've moved beyond an axis limit ? And

2 How come the coolant is way more high pressure when the lathe program is running compared to the button being pressed?
